Spring on the menu: five Sofia restaurants

Seasonal menus are one of our favourite reasons to book a table before the working day is over.

This selection captures spring and early summer 2026: green herbs, more seafood, silky creams, fruit accents and combinations that make “just one more bite” inevitable. We followed the way five Sofia restaurants translated the season into their own cooking. These are dishes from that original selection, rather than a promise of what is on the menu today. Check the current offerings when booking your next meal.

DIVINE BAR&DINE

Seafood and freshness set the direction at DIVINE BAR&DINE. Grilled octopus is one of the featured dishes, served over a crisp base and finished with fragrant pesto.

The balance is carefully judged, the textures work together and the flavours stay clear.

Sea bass with grilled vegetables follows the same idea: a good ingredient, cooked with care. A fresh take on burrata salad adds another perspective to a familiar favourite. The cocktails are designed to sit comfortably beside the plate.

Hamachi Ni

Hamachi Ni’s seasonal selection gives the ingredients room to speak. Fish stays at the centre, with texture, temperature, aroma and finish carefully considered around it.

Among the spring dishes is a selection of Japanese mushrooms cooked in butter:

shiitake, shimeji, enoki and king oyster. Rich without feeling heavy, they arrive with rice and smooth truffle mayonnaise that adds depth without overwhelming the mushrooms. It’s cooking with a rhythm of its own.

La Bottega Monte

La Bottega’s bluefin tuna fillet makes a case for choosing the ingredients and their companions carefully. Romesco brings depth and a little spice, while a fava cream adds softness,

and green Padrón peppers provide a fresh, distinctive finish.

Each bite has something to hold your attention without becoming complicated. The pleasure is in the balance and the quality of what’s on the plate.

Leo’s Pizza Trattoria

At Leo’s, the aim is to make the meal one of the day’s pleasures. The seasonal menu fits naturally, with fresh ingredients, lighter combinations and the comfort of something well made.

The spring selection includes pasta with purple-potato cream, pea cream, Parmigiano

and truffle-scented peas, finished with purple-potato crisps. Dessert takes the form of chocolate mousse with cocoa crumbs, maraschino cherries and passion-fruit coulis. A good excuse for lunch, a catch-up or a pleasant pause between jobs.

Regale Bar & Terrace

In the spring 2026 selection, chef Pavlos Tirhas brought a renewed seasonal focus to Regale. The restaurant also advertised late dining until 11.30pm, leaving room for an unhurried evening. Check the current kitchen hours and menu when booking.

Vegetable crudités with avocado and lime offer a lighter start,

while the Wagyu burger with Café de Paris and pepper sauces goes in a more substantial direction. The terrace completes the picture for warmer evenings.
