New in Plovdiv: Bistro Blyan

A quiet dream. A wish that survives time and circumstance.

Diana and Vasil share a love of cooking and a dream that never quite faded. Their path began at the Culinary Arts Institute in Varna and took them through kitchens including La Trattoria by Enrico Bartolini in Italy and Commotie in Belgium. Along the way, their idea took shape: cooking that is calm, adventurous and closely connected to nature. Now they tell that story in Plovdiv, almost like a haiku: concise, beautiful and made with Bulgarian ingredients. Their intuitive, seasonal approach follows farm-to-table principles, with fermentation, texture and clear flavours to the fore. They cook and serve themselves, knowing that the connection between kitchen and table is part of the pleasure. Blyan feels personal: 16 seats, soft lighting and a tasting menu that asks you to slow down and pay attention.
