A taste of the East in Sofia

Sometimes your appetite points east.

Towards kitchens where the details matter and ingredients get the attention they deserve. Sofia has its own addresses for Japanese flavours, from a bowl of ramen built on a patiently simmered broth to carefully judged sushi and a high-rise restaurant where continents meet on the plate. Some days call for a quick bite. These places are for the days when you want to pay attention to each mouthful. If you feel like going somewhere without booking a flight, begin here.

Haikara Ramen

A taste of the East in Sofia

With a Japanese owner-chef, Haikara serves traditional ramen styles including tonkotsu, shoyu and miso, alongside yuzu shoyu, spicy karamiso and a vegan option. The restaurant’s original arrangement is walk-ins only, as at many ramen shops in Japan. Weekends can be busy, so you may need to wait for a table.

Weekday specials can include gyoza nabe, a hot pot,

or Osaka-style tonpeiyaki. Follow the restaurant’s own announcements for the current selection and opening hours, including any break between lunch and evening service.

JAZU by Hamachi

Jazz and sushi both depend on timing, improvisation and a balance you can feel more easily than explain. At JAZU by Hamachi, contemporary live jazz and the sound of a saxophone sit comfortably alongside dinner. The menu takes a modern approach to Japanese cooking (in Bulgarian), with fusion touches and close attention to ingredients.

The menu in our spring selection ranges from Atlantic bluefin tuna caught using the traditional almadraba method

to octopus from the waters around Gibraltar. The dishes balance clear flavours with creativity, while cocktails and Japanese drinks add freshness and depth. In summer, the garden offers a green pause without leaving Sofia. An evening here brings the pleasures of a Japanese meal and a jazz bar into the same conversation. Spectrum Restaurant

On the 28th floor of Grand Hotel Millennium Sofia, Spectrum pairs dinner with a different view of the city. Asian and Latin American influences run through the menu, developed by chef Teodor Tankov in this spring 2026 portrait.

Miso black cod, maguro steak, king-crab uramaki

and Pata Negra pork ribs bring different textures and plenty of umami to the table. The room follows suit, with contemporary interiors, art installations and a panorama of Sofia after dark. Music from guest DJs adds to the evening when programmed. Behind the bar, the repertoire includes yuzu, jalapeño tequila, white-pepper liqueur and infusions, while the Fine & Rare wine selection offers another way to accompany the meal.
